For sale sourdough starter that is dehydrated and shelf stable.
Here is some information about sourdough: it doesn't matter where the sourdough originated- if its Alaska from the gold miners or if its from San Francisco because over time (and not very much time- less than a month) every sourdough starter collects the wild yeast from the new area where it is living and becomes place specific; translation: it is no longer the sourdough from Alaska during the gold rush or San Francisco, it is now the sourdough from the new place. Just thought you should know this because people who are telling you this was Granny's sourdough from the 1800's and it's really special either do not understand the truth about wild yeast or they do and won't tell you. It all changes and will never remain the same unless you live where it came from.
This sourdough has been continually maintained and used since originally started; because it is dehydrated the starter is shelf stable and can be rehydrated whenever convenient.
Information on the pictures in the order shown;
#1. rehydrated starter in a dish that happened to form a heart pattern;
#2. starter beginning to grow;
#3. same starter after about 12 hours;
#4. the no yeast, just starter raised bread in the mixer;
#5. the bread after rising and ready to put in the oven;
#6. the bread after baking and being spread with a bit of butter on top;
#7. the bread after slicing;
#8. herb crackers made with this sourdough starter.
Information about this starter: it has been kept in both glass and plastic jars with lots of room to expand; generally lives in the fridge, not on the counter, as I do not own stock in flour companies and I do not do discard- better known as dumping out the extra or baking things you do not need; has been watered with both bottled water and tap water; has been fed with a 50/50 combo of unbleached white flour and whole wheat flour (can be changed to whichever flour you prefer); has been fed sugar occasionally to jumpstart its growth.
Purchase of the starter will include a sheet describing the method I have used to rehydrate the starter (I test every batch by starting some myself), a brief history of this starter, how I maintain the starter and the advice that the internet has a wealth of information on the subject of sourdough and recipes for the use of the sourdough.
Also included will be copies of two recipes for the items pictured- for the bread raised with only sourdough starter and for the crackers, both shown in the pictures.
