Clearjel (Cook Type) is a modified cornstarch used by many commercial bakers in fruit pie fillings.
This cornstarch works well with acidic ingredients and tolerates high temperatures.
It doesn't begin thickening until the liquid begins to cool.

Make delicious preserves, stunning fruit fillings, and sweets that are sure to impress with Hoosier Hill Farm’s thickeners. Use Clear Jel for perfect pies and compotes, add Fruit Pectin to jellies and jams, and try Agar-Agar powder as a vegetarian alternative to gelatin in all your favorite treats.
Strawberry Jam
1. Wash and slice strawberries, remove hulls and green tops.
2. Pour sugar into a heated saucepan, add in strawberries and mash to desired consistency while cooking over medium heat.
3. Add in lemon juice and continue to heat until thickened.
4. Pour jam into warm jars and allow to cool prior to refrigeration or usage.
5. If you plan on keeping this jam over the course of a few months - be sure you are following proper canning instructions, otherwise refrigerate and use quickly.
