Pectin is a natural substance found in plants. It is a polysaccharide (polysaccharide) and is most often found in fruits, especially citrus, where it protects the fruit from drying out and protects against microbes.
Due to its gelling and thickening properties, pectin can be used in the preparation of jellies, fruit jams and marmalades.
Pectin also has a very good effect on health. They lower the rate of fat absorption, and a diet rich in them helps to reduce the level of LDL cholesterol, which is unfavorable for the body. Pectin prevents spikes in sugar by inhibiting the activity of enzymes that break down simple sugars and starch, thanks to which pectin reduces the risk of insulin resistance, diabetes and weight gain. Pectin binds to water, which makes the food content swell in the stomach and we feel full for longer. This makes losing weight easier.

Example usage
Prepare 2 kg of fruits and 1 kg of sugar. Pour half a glass of water into the prepared fruits and bring it to a boil. Mix 33 g of pectin with 1 glass of sugar. Pour into boiling fruit and stir. Cook for 3 to 5 minutes. Pour in the remaining sugar and cook until it is completely dissolved. Add a teaspoon of citric acid dissolved in a small amount of hot water. Mix thoroughly. Collect the foam and pour the hot jam into the jars. It is recommended to pasteurize the jam for 20 minutes.
