Tapai or tape is a traditional Indonesian snack produced from the fermentation process of carbohydrate foodstuffs as a substrate by yeast [1]. In Indonesia this substrate is usually cassava tubers and glutinous rice. Yeast for tapai fermentation is a mixture of several microorganisms, especially fungi (molds and fungi), such as Saccharomyces cerevisiae, Rhizopus oryzae, Endomycopsis burtonii, Mucor sp., Candida utilis, Saccharomycopsis fibuligera, and Pediococcus sp.
Use for :
- Making sweet, fragrant and delicious cassava / cassava tape.
- For Japanese ant feed: Japanese ants can be efficacious as medicine if the Japanese ant is fed yeast.
Composition :
Ragi tape yeast is made from: rice, garlic, javanese chili, white Pepper, and fennel.
How to make Cassava Tapai / Tape with NKL Yeast ?
- Peel cassava and wash clean, cut according to taste.
- Steam the cassava until done. Allow it to cool completely.
- Mash the yeast tape until smooth.
- Move and arrange cassava in a plastic / Banana Leaf container that has a lid. Sprinkle with yeast until evenly distributed and close the container.
- Store in a dark cupboard and room temperature. Let stand for 2-3 days. Tape is ready to be enjoyed.
Note:
Some Ragi Tape Yeast maybe can not be received in whole round shape due to shipping, but it also still can be used as yeast or Japanese ant feed. We try to packing the package with bubble wrap to make the package send to our customers safely and also reducing product damage risk.
